In the cellar: This Gamay is fermented and aged in concrete, highlighting its fresh and vibrant character.
Farming method: Natural farming with ongoing organic conversion since 2011. Clément is transitioning from the traditional goblet vine training style of Gamay to less dense plantings with trellised vines. This method reduces competition for nutrients and water, resulting in smaller, more concentrated grape clusters. Improved air circulation and light penetration further enhance ripening and minimize disease pressure. Current yields average 40-45 hl/ha.
