In the cellar: The Pineau d’Aunis os macerated for six days, while the Cabernet Franc rests on its skins for twenty-two days. The resulting juice wiss fermented with indigenous yeast and aged in stainless tanks for five months. All fermentations are completed using indigenous yeasts, and when the wines do receive SO2, it never totals more than around 2.5g/hl.
Farming method: Biodynamic
Tasting notes: Soft tannins and bright acidity with notes of dried strawberries, dark cherry, and blackberries. Fun fact: ‘Loustic’ means prankster or joker in French. Huzzah!
