In the cellar: Hand-harvested and whole-cluster fermented in neutral oak with indigenous yeasts. Aged for 18 months in neutral oak without fining, filtering, or added SO2.
Farming method: Biodynamic; from a tiny plot of less than 0.5 hectares on rocky white soils with marlstone and sandstone.
Tasting notes: A focused red Burgundy with woodsy spices, plummy flavors, and fine aromatic herbs. Vines are 60+ years old. (Fun fact: The name "Belles Lies" (beautiful lees) comes from a 17th-century practice developed by monks who would dry their barrels and rub them with the lees (yeast cells) of the grapes.)
