In the cellar: After these grapes are hand harvested the wine ferments in wood and ages in barrel for 18 months.
Farming method: Organic; the Guillemot family harvests grapes for this cuvée from three plots in three differing appellations: Savigny-lès-Beaune, Chorey-lès-Beaune & Bourgogne
Tasting notes: Medium weight with fragrant aromas of dried thyme, raisins, and violets, with a darker robe and denser feel than your average Bourgogne Rouge. An excellent and special bottling not to be missed!
