In the cellar: Grapes are hand-harvested and carefully sorted and whole-cluster fermentation is conducted using native yeasts in concrete tanks, a technique that enhances aromatic complexity and freshness. The wine is aged for 12 months in neutral French oak barrels and bottling is completed without filtration and with minimal sulfur to maintain the wine’s natural expression.
Farming method: Anne-Sophie practices organic farming with a deep commitment to preserving the biodiversity and health of her vineyards. She employs traditional methods such as plowing by horse and relies on composts and natural treatments to nurture the vines. The ‘Les Labourons’ vineyard is planted on pink granite soils, which impart minerality and finesse to the wine. Yields are kept low, around 35-40 hl/ha, to concentrate the fruit and enhance quality.
Tasting notes: Aromas of violets, red cherries, and wild strawberries mingle with subtle hints of crushed granite and fresh herbs. The palate is silky and refined, with layers of tart red fruit, cranberry, and a touch of black tea. Fine-grained tannins and a long, mineral-driven finish speak to the vineyard’s exceptional terroir. This Fleurie pairs beautifully with roasted poultry, mushroom dishes, or soft cheeses, and will age gracefully for 5-8 years.
