2015 La Dama, Recioto Valpolicella Superiore

Region: Veneto, Italy (in the heart of Valpolicella Classico, precisely in the town of Valpantena)
In the cellar: Grapes are air dried between the end of September/early October all the way through March. Grapes undergo a cold soak maceration for ten days before fermentation. When the grapes are pressed, only a part of the sugar turns into alcohol with a slow fermentation at low temperatures, thus creating a sweet wine. Wine is aged in old French oak 225L barrels for 112 months.
Farming method: Certified organic; vines are grown on veronese pergola upon clay soils with white limestone structures
Tasting notes: Color is a dark ruby red with and purple rim; aromas are cherry liquor, woodsiness, jam, cocoa and spice; taste is sweet, decadent, and full-bodied. Pair with a freshly baked right-out-of-the-oven chocolate cake!
