In the cellar: Hand-harvested old vines are fermented by native yeasts in temperature-controlled stainless steel tanks. The wine is aged for 6 months, without bâtonnage, and bottled directly off the fine lees from the tank, cold stabilized, without filtration.
Farming method: Organic/Biodynamic
Tasting notes: A still txakolina, so no bubbles on this one, and slightly lower in alcohol at 11% ABV. Citrusy, full bodied from its lees aging, and stony. Smells a bit like freshly ground pesto of pepper, pesto, and, basil.
