In the cellar: Just first pressings are used and the primary fermentation is with wild yeasts; Cédric bottles using less pressure than usual at 4.5 atmospheres rather than 6, imparting softer bubbles; zero dosage in all of his Champagne; all stainless steel aged
Farming method: 3 hectares are farmed all organic and Cédric’s wines are all single-site, single-variety and single-vintage
Tasting notes: Harmonious and elegant. Golden pear color. Aromas of sweet citrus. Palate is bright for a Pinot Noir, with a dry and slightly lemony long finish.
