In the cellar: Made in Méthode Ancestrale; All fermentations are completed using indigenous yeasts, and when the wines do receive SO2, it never totals more than around 2.5g/hl. 
Farming method: Biodynamic, 3.8 hectare farm upon sandy, clay soils spread out over 5 parcels; All grapes are dry-farmed. None of the vineyards are irrigated.
Tasting notes: With residual sugar <1 g/L, this copper-pink pét-nat is quite a savory Saumur treat with flavors of ginger, cashews, citrus, and strawberry candy.
