Dirt is important to Sarah Hoffman. In fact, she named her farm Green Dirt Farm after the healthy soil she hoped to cultivate because fertile soil means healthy grass, which in turns means happy sheep who produce delicious milk to use for cheesemaking! A beautiful cycle! To make sure her sheep are happy, Sarah and her team maintain the high standards set by the Animal Welfare Approved certification. They undergo a rigorous audit every year to maintain their certification, to ensure their sheep continuously receive the best care possible. All of these thoughtful practices are good news for us because they mean wonderful cheese! In this case, little Dirt Lover.
This sheep’s milk softie is covered in ash to control the acidity of the cheese, a technique cheesemakers have been using for centuries. Thus, the tartness of the cheese does not overwhelm Dirt Lover’s other flavors of butter, lemon and mushroom. We recommend letting the wheel come to room temperature before eating, but if you can’t bear to wait, we don’t blame you!
