In the cellar: Vin Jaune is an old tradition in the Jura; literally meaning ‘yellow wine’ Vin Jaune must be made from the grape Savagnin. This Vin de Voile (a wine made under a veil of yeast) is aged for six years in barrels. This aging under the yeast is what produces the characteristic notes of nuttiness in Vin Jaune.
Farming method: Organic; Located on 13 hectares Vandelle is a follower of “l’agriculture raisonnée” or sustainable agriculture, which requires compliance with strict specifications.
Tasting notes: A dense and incredibly aromatic rush of pecan pie, ginger, curry, and lemon peel. This Vin Jaune evolves in the glass as it continues to open. To expose it to more oxygen, feel free to decant and serve slightly cooler than room temperature (between 55-60°F).
