In the cellar: Unoaked and aged on lees; Manual harvested, fully destemmed before a slow and gentle pneumatic pressing. Undergoes malolactic fermentation. Matured in tank on fine lees.

Tasting notes: Located outside of Chablis, this 14th c. family estate still ages wine in a cellar from the 11th century. On the palate it reveals fine notes of almond, pear, and spice, with a dry and cooling finish.
