Grape variety: Tsitska, which is believed to be among one of the oldest white grape varieties in western Georgia. Tsitska is a late ripening grape variety and is used primarily to make sparkling wine in Georgia.
Producer: Sisters Baia and Gvanca Abuladze
Region:  Imereti region of western Georgia (the magical country, not the US state!)
Farming method: Organic/Biodynamic; this all natural wine was made according to lunar cycles and the earth’s rhythms
Tasting notes:  This sparkling pét-nat is the color of sun-kissed straw, with aromas of persimmon, honey and a dry finish of apricot and spice.
