In the cellar: Fermented with indigenous yeasts in stainless steel tanks and old, open-top foudres, followed by 5 years of aging in bottle. Made with low intervention, unfiltered; minimal sulfur at bottling.

Tasting notes: Lean and smooth with notes of spice, blackberry. blueberry and brown sugar. Refined and excellent with paella with chorizo and mussels.
