In the cellar: Whole bunches are sorted gently and fermented carbonically. After 3 weeks the whole bunches are pressed into old oak vats. Elevage takes place in 500 liter vats for 18 months. The wine is lightly sulfured at bottling.
Farming method: Organic
Tasting notes: Well structured with sour cherry and plum notes. Fine tannins equivalent to a bold Pinot Noir. Pair to roasted veggies, goat cheese, or braised short ribs.
