Sherry Gray was a cherished member of the small Greensboro community. He lived simply, taught generations of locals as a substitute teacher, and enriched the lives of those around him. Thus, the cheesemakers at Jasper Hill wanted to honor his memory by christening their new cheese Sherry Gray. This soft, almost fluffy cheese is ripened with a coating of ash on the outside, which helps control the acidity and promote growth of the fine white bloom on the rind. It is mellow, smooth, buttery and minerally with the tang of fresh curds and a sweet cream finish. Like Mr. Gray, this little wheel is easy to love.
