With a knobby, lined, dark brown rind, a full wheel of Roccolo Valtaleggio almost looks like a small tree stump. It is actually named for the cylindrical stone structures surrounded by trees and bushes that hunters used as shelter or as an elevated vantage point to spot pray. In fact, this cheese would probably be an excellent companion to a long day sitting in a “roccolo”! There is a distinct line of ripe, creamy paste under the rind which is smooth and almost spicy, while the center of the cheese is firmer and more crumbly with a gentler, buttery taste. Take a bite with both the soft edge and drier center to experience the balance of flavors and textures that makes this cheese irresistible.
