Reading
Reading
Reading, Reading, oh how we love you. Pronounced like Reading Railroad in Monopoly, this cheese should become a part of your usual rotation because it goes with everything, tastes like fresh hay, nuts, and roasted vegetables, has a flavorsome, pretty pink rind, and melts like a dream.
Reading is produced at Spring Brook Farm in Vermont. Sales of the cheese help support their non-profit, the Farms for City Kids Foundation, which brings students from city schools up to Spring Brook for a week of learning about cheese, farming, and land stewardship. So every time you take a bite of delicious Reading, you are not only eating a tasty cheese, you’re also supporting a good cause! Double yum!
