Grape: A blend of 60% Grenache, 13% Clairette, 13% Syrah, 10% Cinsault, 3% Mourvèdre, 1% Bourboulenc
Producer: Guillaume Demoulin, fourth generation winemaker along with Céline his wife
Region: Tavel, Côtes du Rhône (France); 32 hectares of vines situated in the hills of the Montagne Noire with stony vineyards full of sand and quartzite galets roulés (rounded stones) resembling those of the famous Châteauneuf du Pape
In the cellar: The skins undergo maceration for 12-48 hours in cement tanks.
Farming method: Organic; in Tavel, even the best parcels of grapes may contribute to its wine, which is a reason why this area is so special; in other appellations where rosé is made, rosé is often regarded as an afterthought, but this is not the case in Tavel!
Tasting notes: Fresh, floral, juicy strawberries, bitter cherry, wet stone. The finish is very long, bold, and sappy with a late floral nuance adding a measure of grace.
