In the cellar: Fermented spontaneously in open boxes, in contact with the skins for 24 days. The skins are pressed and the wine spends 10 months in stainless steel. The wine is lightly sulfured at bottling.

Tasting notes: A clean and aromatic skin-contact Chardonnay. Notes of stones, lemonade, peach pit and a full mouthfeel of honeyed pears. Pair to Leonora, a Spanish goat’s milk cheese.
