Mina grew up in Casablanca in the 1950s, and she brought the flavors of her childhood with her as she cooked across Europe and the United States. In 2010, her children, inspired by her dishes, started a company, named after their mother, to sell her famous harissa. While many harissas are blisteringly hot, this one is mild with just a touch of chili in the sweet red pepper sauce. Use this condiment liberally, folded into scrambled eggs, spooned over avocado toast, or smothering roasted chicken.
