Ciresa Taleggio is one of our cheese case sweethearts; we give it to everyone and we snack on it endlessly ourselves. This Taleggio, like most made with the Protected Designation of Origin label, is from Lombardy, the north central region of Italy. Veteran cheesemakers make the square cheese three times a day, after which it is aged for a few days before heading to the Ciresa aging facility. Founded by Giovanni Ciresa in 1927, Formaggi Ciresa has nearly a century of experience in aging cheeses, making sure each wheel is properly washed, turned, and cared for before it is sent out into the world. Perhaps this is why we find this Taleggio so special! It is gentle and elegant, buttery, earthy, and a touch funky. Add it to your next polenta or pizza for added creamy, melty goodness.
