Podda Misto from the sunbaked island of Sardinia is a tasty alternative for eating or grating over anything that needs a bright pop of salt. The golden, grooved rind and, at times, pinkish paste make it quite a beauty, and it certainly tastes as good as it looks. The sheep’s milk adds a savory quality, while the cow’s milk lends a little sweetness. While it is smoother than the Parmigiano Reggiano we have on our site, it will still break nicely into craggy crumbles that you’ll want to pop into your mouth one after another after another. And if you happen to have a glass of smooth rosé on hand, your wedge of Podda Misto will, with almost shocking ease, be completely gone.
