Thanksgiving Wines: Part 1 with Bill:
2017 Samuel Billaud Petit Chablis
Who: Samuel Billaud
What: Chardonnay
Where: Burgundy, France
How: These grapes were fermented in stainess steel tanks.
Farming Method: Organic
Fun Fact: Samuel Billaud comes from the same family that has owned and run Domaine Billaud Simon (also in Burgundy) since 1815. Samuel worked here for his Uncle Bernard for two decades before the two had a fight which led to Samuel starting his own winery.
Tasting Notes: All limestone and white peaches.
2018 Brea Wine Company, Chardonnay Santa Lucia Highlands
Who: Chris Brockway and Tim Elenteny
What: Chardonnay
Where: California, United States (The Santa Lucia Highlands are in the middle Southern part of California right near Monterey.)
How: The grapes are picked based on lunar cycles! First the grapes were fermented with native yeast and then they were aged in neutral French oak barrels for 8 months.
Farming Method: Organic

Tasting Notes: Sleek and smooth with notes of vanilla, lemon, and nutmeg.
2017 Brea Wine Company, Cabernet Sauvignon Santa Margarita
Who: Chris Brockway and Tim Elenteny
What: Cabernet Sauvignon with dashes of Petit Verdot and Merlot
Where: Californa, United States (More specifically in Paso Robles which is in southern California inbetween Monterey and Santa Barbara)
How: After spontaneous fermentation this aged for 20 months in used French oak barrels.
Farming Method: Organic
Fun Fact: Some people think that Chris and Tim are nutty for growing Cabernet Sauvignon so far down South in California but these winemakers think the cooler air gives their Cabernet more weight and complexity. You be the judge!
Tasting Notes: Plums, spiced dark chocolate, and a taunt body.
2016 Maison Anselmet, La Touche Vin Rouge
Who: Renato and Bruna Anselmet along with their son Giorgio.
What: A blend of Petit Rouge, Cornalin, Mayolet, and Fumin.
Where: Valle d’Aosta, Italy
How: This was fermented for 8 days before aging in stainless steel.
Farming Method: Biodynamic
Fun Fact: The Valle d’Aosta is the smallest wine region in Italy.
Tasting Notes: It’s jam time! Strawberry and cherry jam with a velvety body.
2018 Olivier Minot La Boutanche Gamay
Who: Olivier Minot
What: Gamay
Where: Southern Beaujolais, France (Southern part of Burgundy)
How: Wine is made with semi-carbonic fermentation with native yeasts in cement tank with absolutely no SO2 added whatsoever. Slight little spritz upon opening the screw cap.
Farming Method: Biodynamic/Organic farming
Fun Fact: From 70+ year-old Gamay vines planted atop sand and limestone-based soils.
Tasting Notes: Smooth and chuggable (just look at that pig!) with notes of cherry and plum.
2014 Niepoort Late Bottled Vintage 375ml
Who: Dirk Niepoort
What: A blend of Touriga Nacional, Touriga Franca, Tinto Cão, Tinta Francisca, Tinta Amarela, Sousão, and Tinta Roriz
Where: Douro, Portugal
How: These grapes were foot stomped before undergoing aging in old oak vats for 4-6 years.
Farming Method: Biodynamic
Fun Fact: The Niepoort family moved from Holland to Portugal in 1842.
Tasting Notes: Milk and dark chocolate, hazelnuts, and berries.
