Humboldt Fog Brûlée

Thanksgiving may be behind us, but the holiday show continues on! Hanukkah, Christmas and New Year’s are right around the corner, and we are excited to offer all the fun food-ideas you need to keep your guests cheerful and satisfied. This week’s recipe comes to us from our friends at Cypress Grove in California. Cypress Grove is a well-known producer, best known for their cheese Humboldt Fog, an American Original that paved the way for soft-ripened goat cheese here in the U.S. The cheese has a slight buttermilk tang, complemented by floral notes and herbaceous overtones. This recipe uses sugar and a torch to take Humboldt Fog to the next level. The result is divine! A crunchy, sugary top gives way to the melty, savory goat cheese underneath.  This is a showstopper for the start or end of a holiday meal, and takes only 5 minutes to make - what a gift!  Enjoy! 


Ingredients

  • 1/2 lb Humboldt Fog*

  • 2 tablespoons turbinado sugar

Directions

  1. Sprinkle the cut side of the cheese with a layer of sugar.

  2. Using a culinary blowtorch, heat the sugar until you have a golden brown, crunchy crust.  Alternatively, you can use the broiler on high, with the pan as close as possible to the flame, watching carefully not to burn the sugar.

  3. Serve with crackers or bread, and a sweet or savory jam.  Shown here is d’argo Marasque Sour Cherry Fruit Spread, that can be found here at the shop.
