Lime & Tomato Chutney
Finally, we are able to grill without wearing parkas to keep dry! The other day the sun popped out and demanded that we grill whatever we had. There was no time to run to the store for reinforcements - it might have been raining by the time I got back! So we dug out what was in the fridge - two chicken breasts, one steak, and this little chutney. What came out of it was a delicious little sauce to accompany whatever protein you might be grilling. The tomatoes and sultanas give this just enough sweetness, which is balanced by the piquant chillies and ginger. The addition of soy gives it a rich earthiness and the lime brightens everything. This marinade and sauce work great on shrimp, chicken beef or pork. Recipe based on two servings. Enjoy!
Ingredients
Marinade
4 limes, juiced
1/4 cup olive oil*
2 garlic cloves, smashed
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
Sauce:
4 tablespoons LeBonmagot Tomato and White Sultana Chutney*
2 tablespoons soy sauce
1/2 lime, zested and juiced

Directions
In a small bowl, combine lime juice, olive oil, garlic cloves, salt and pepper. Pour over choice of meat or fish. Allow to sit in the refrigerator and marinate 30 minutes, up to 4 hours.
In another bowl, combine chutney, soy sauce, lime juice and zest.
Remove protein from marinade and grill to perfection. Slice and spoon over prepared sauce.
