P.L.T. Sandwich
Craving a B.L.T., but want to put a spin on it? This requires some creative ingredient stand ins. The flavor-bomb jar of Datterino Tomatoes was the perfect, sweet, juicy sub for the real-deal summer tomatoes. And the prosciutto was so perfectly crisp, it might just be my sub for bacon all of the time…nah, but it was so delicious that I would definitely do it again! Enjoy!
Ingredients
4 slices whole wheat bread
6 large slices Pio Tosini prosciutto, sliced not too thinly*
1 jar Yellow Datterino Tomatoes*
2 tablespoons Lara’s Cuisine Tomato Pesto*
4 tablespoons mayonnaise*
4 leaves boston bibb lettuce

Directions
Heat a tablespoon of olive oil in a large sauté pan. Fry prosciutto slices on both sides until crisp. Set aside on paper towels to drain.
Drain the tomatoes and cut in half.
In a small bowl, combine the tomato pesto and mayonnaise until well combined.
To assemble, slather each slice of bread with the mayo mixture. Layer the tomatoes, prosciutto and lettuce on top of one slice of bread and top with the remaining slice.
