Triple Cream and Bubbles, Baby!

It’s time for this year to end. SO time. Bye, bye, 2020, we knew ya way too well. Let’s leave this insane year behind with a wedge of cheese in one hand and a glass of bubbly in another. Or maybe a wheel of cheese in one hand and a bottle of bubbly in the other.

Thus, for New Year’s Eve, we’ll be drinking Champagne (best part of New Year’s), so we need to have the goopy, super creamy, plush Brillat Savarin, too. Pierre and Henri Androuët created the cheese in honor of Jean Anthelme Brillat-Savarin, Renaissance man and inventor of gastronomy. Brillat-Savarin’s (the man) infinitely quotable writings remind us that it is worth our time to ponder food and eating, which is a great way to ring in 2021 when you have delicious cheese and wine waiting to be consumed.

Cut the top off your wheel of Brillat, (yes, go for the wheel!) and dive right into the soft, buttery, triple cream goodness. I recommend going all out and getting Champagne for the occasion, like one of my favorites: Cedric Bouchard’s 2018 Roses de Jeanne, Cote de Val Vilaine, an all organic Pinot Noir blanc with aromas of sweet citrus and a dry and slightly lemony, long finish. If you opt for Prosecco, Cava, or your favorite sparkling wine of the moment, that will also do the job of refreshing  your palate so you’re ready for the next rich bite of cheese. 

And that is how I want to spend my New Year’s Eve and these few days leading up to it: bite of Brillat, sip of Champagne, bite of Brillat, sip of Champagne, and repeat till gone. Don’t forget a backup wheel and extra bottle because they’re going to run out too quickly. 

And just a quick end-of-year THANK YOU: thank you so much for helping us get through this insane year. YOU are the reason we can keep going in this crazy business we love. You deserve ten pages of thank yous, but I’ll stop here because I’m sure you’d rather eat and drink than listen to me tearfully ramble on about how much we love you. Just know it could happen. Instead, let’s cheers, friends!
